MY BEST EVER CHINESE GINSENG CHICKEN SOUP OR SAMGYETANG! 蔘鷄湯 - SO GOOD YOU WILL GO MAKE YOURSELF ANOTHER POT!


The BEST Chinese soup EVER!! - VERY delicious! - Non rich and what you 
would call good old fashioned home style comfort food at it's VERY best! - I  
think the queen will ask for another 2 more bowls of this! Plain - yet so 
simple and tasty you'll keep coming back for more! Lovely ginger infused 
chicken soup to warm your soul especially for those cold wintry months!

BEFORE YOU BEGIN - IMPORTANT!!
You may use 900 - 1 kg chicken
You may replace 2 chicken thighs with skinless to reduce fat
Do NOT exceed sugar! It will spoil soup - only there to balance your flavours.
Sugar may be replaced with a chinese jubube or a very large date
Skin may be left on ginger for added fiber - Something I always do
To speed things up place roughly chopped ginger, onions (excluding green 
onion), whole chili and garlic cloves into food processor with metal blade on 
and pulse until finely pureed - using your water to swish every bit of it out 
into soup. Allow for a long slow simmer to extract the stock from bones for a 
lot of the flavour is in the bones which you may remove later.
DO NOT ALLOW ANY LEMON PIPS TO GET INTO SOUP THEY WILL 
TURN IT BITTER!
If you want to lower cholesterol scoop off the fats to use as chicken schmaltz 
in other recipes.

Warning! - To those on heart medications! Ginger does interact with some 
medications, including the anticoagulant drug warfarin and the

Ingredients:

1 kg chicken thighs (5 chicken thighs) or 1 very small chicken 900 g - 1 kg
100 g ginger, freshly grated
1 jalapeno or chili
8 garlic cloves, fresh
1 medium onion
2 spring onions, greens reserved
110 g rice (a heaped 125 ml cup measure) I just use ordinary rice
15 ml salt or to taste
5 ml white pepper, to taste (or freshly ground black pepper)
2 tsp sugar
1 lemon, medium (freshly juiced) or to taste - Lime will be very good too!
2 liters water - just enough to cover chicken at beginning.

Method:
To a food processor with metal blade on add whole jalapeno, garlic cloves and roughly chopped ginger and onion. Pulse until finely chopped or pureed.

To a wok or pot add all the ingredients together with
a tablespoon salt, excluding sugar and green onions.
Measure 2 liters of water and using part of it to swish out food processor bowl
adding it to pot with just enough water to cover chicken.
Boil for about 20 minutes and then lower the heat to simmer - This will 
soften the chicken bones releasing their stock.
When bones begin to soften releasing their flavours and meat is falling off 
bone - You may now adjust the rest of your seasoning to taste.
Add finely chopped green onions. - Serve and enjoy and then go make 
yourself another pot! ;)
